Butcher’s Bistro is a restaurant and retail butcher specializing in Colorado cuisine. We buy cows, pigs, lambs, and poultry from small CO farms and focus on nose-to-tail preparation changing the menu frequently as we work through the butchering process. We also buy cheese, eggs, produce from CO farms, in an effort to give our guests a true Colorado experience. Our cuisine is upscale-casual, offering our guests a chance to pick their cut of steak from our butcher case and have it prepared to their liking, or choose one of the many items from our seasonal menu and try one of our composed dishes. From sausage, to chicken liver pate, to smoked meats, everything is prepared in house with a “comfort food meets new American bistro” theme. Whether enjoying lunch or dinner in our restaurant, or purchasing a pound of dry-aged beef and a few smoked kielbasa to take home for the grill, Butcher’s Bistro is a great choice for family, friends, and neighborhood foodies.
